Whether you like or not Asian food, this is something that’s really good! You will enjoy super delicious and creamy brown rice with a hint of ginger, soy sauce, and richness from the veggies. An absolute favorite in my home, and let me tell you that the best part is that it can be done within 30 minutes. IngredientsBlack Pepper Fried Brown Rice1 cup brown rice1 tbsp. grape seed or vegetable oil, divided2 large eggs, beaten2 tbsp. grated ginger3 garlic cloves, minced1 cup diced carrots1 cup diced onion1 cup head of celery4 oz. white bottom mushrooms, sliced1/2 cup low sodium chicken broth1/2 cup chopped green onion2 tbsp. low sodium soy sauce1/2 tsp. sea salt1/2 to 1 tsp. fresh ground black pepperDirectionsBlack Pepper Fried Brown Rice Cook rice according to manufacturer's directions or in a rice cooker. Place into the refrigerator. Heat a wok or large skillet over high heat, until very hot. Add 1 tsp. oil and swirl to coat the bottom and sides of the wok. Add the eggs and cook for 30 seconds to 1 minute. When the bottom is just starting to brown, flip the egg over and cook for an additional 30 seconds. Transfer to a cutting board and chop into bite-sized pieces. Clean out the wok with a paper towel and add 1 tsp. oil. Add the ginger and garlic, stir-frying for 10 seconds. Add the carrots, onions, celery head, and mushrooms. Stir fry for 30 seconds. Pour the broth around the outside of the vegetables and stir-fry for another minute or until most of the broth has evaporated. Pour the remaining teaspoon of oil around the outside of the vegetables. Add the scallions and rice. Stir-fry for 2 to 3 minutes, breaking up the rice and heating it through. Add the soy sauce, salt, pepper, and chopped egg. Toss to combine.
